Chocolate Loaf Cake

It is deep November and the season has drawn me inward.  The shortened days and long nights have slowed down the natural activity of my body and my mind has awaken to latent ideas and intentions.  As the year dies away, I am thinking of all the possibilities of the next.  The years pass quickly and without thoughtfulness they can be lived as if half asleep.
I’m inspired by the changing of the leaves.  They glow bright, then fade, then fall away.  The tree sleeps, gathers, waits and at the appointed time branches out, reaches out to the the spring sun,  flowers and begins anew.
Have a blessed fall and winter.  And may it become a time to

Chocolate Loaf Cake

Chocolate Loaf Cake

Cook Time 1 hour hour
Total Time 1 hour hour 10 minutes minutes

Ingredients

  • 1 1/2 cups sifted cake flour
  • 1 1/4 cups sugar
  • 1/2 cup cocoa
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup shortening or butter
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 2 eggs

Instructions

  • Preheat oven to 350º
  • Sift first 6 ingredients into a large bowl.
  • Cut in shortening with pastry blender.
  • Add buttermilk and vanilla, beat for two minutes on low speed with a hand mixer or stand mixer or 200 strokes by hand.
  • Add eggs and beat again for two minutes.
  • Bake in a greased loaf pan 9x5x3 inches for 50 to 60 minutes.

    That’s impressive and quite autumnal. I can imagine sitting in front of an open fire and eating it with a cup of tea – maybe with butter spread on top…
