This week we were paid a visit by my brother in law who was in town for business. I knew I had to prepare something special, something that spoke of home while he was away from home. Dinner on these occasions are more than just fueling the body; they are a catching up, an affirming of the family bond that can’t be lost through distance. Dinner becomes the way to show love and reconnect. For this special dinner I turned to The Silver Spoon once again and prepared Arrosto All’arancia (Roasted Pork with Orange Sauce). It was oh so easy but oh so delicious. This will make a regular appearance on our dinner table.
Ingredients
3 tbsp butter
1 ½ cups orange juice
1 tsp orange zest
1 clove garlic
Pinch of chili powder
Pinch of dried oregano
2 ¼ lb pork loin, boneless
Salt and pepper
Instructions
Preheat oven to 350º.
Melt butter in a pan, add orange juice, zest, garlic, chili powder, and oregano, season with salt and pepper, and mix well.
Rub the meat with salt and pepper and place in a roasted pan.
Pour in the mixture and roast basting frequently for about 1 ½ hours.
Carve and serve with the cooking juices.

Arrosto All’arancia (Roasted Pork with Orange Sauce)
Ingredients
- 3 Tablespoons Butter
- 1-½ cup Orange Juice
- 1 teaspoon Orange Zest
- 1 clove Garlic Minced
- 1 pinch Chili Powder
- 1 pinch Dried Oregano
- Salt And Pepper
- 2-¼ pounds Boneless Pork Loin
Instructions
- Preheat oven to 350ºF.
- Melt butter in a saucepan over medium low heat. Then add orange juice, zest, garlic, chili powder and oregano. Season with salt and pepper and mix well.
- Rub the meat with salt and pepper and place in a roaster pan. Pour the orange mixture into the pan over the pork, put pan into the oven and roast it, basting frequently for about 1 ½ hours. Remove from oven.
- Carve and serve with the cooking juices.

This has always been my go to with a pork roast. The silver soon is my Bible with good eats. It makes an amazing fried rice with leftovers the next day.
