I had a birthday a week or so ago and I wrote a song for myself. You kinda have to force it into the melody of “What’s My Age Again?” by Blink 182. It goes perfect with this post because it was written just for fun the same reason you make and eat these sandwiches. They are hearty and satisfying and eaten when you are being completely lenient on yourself. 😀 I hope you enjoy!
Nobody Likes You When You’re 53
It was a weekend and I was out with friends
When we decided to hit up Athens.
I was dancing in the streets. I didn’t care who’d see.
And they were all afraid that I would start to sing.
That’s about the time they walked away from me.
Nobody likes you when your 53.
My friends say I should act my age.
What’s my age again? What’s my age again?
It was late at night and I was all alone.
That’s when I decided to pick up my cell phone.
My kids were getting snaps both left and right.
They didn’t think this was how I should live my life.
I posted and deleted several things.

It was summertime and the fam was at the beach
We had BBQ and a couple of drinks.
The kids were playing in the pool
When Joe and I snuck down to beach.

Ingredients (Serves 4)
1 lb lean ground beef
1 egg, lightly beaten
1/2 cup bread crumbs, plain or Italian
2 tbsp fresh parsley, chopped
1/8 tsp black pepper
2 tbsp vegetable oil
2 cloves garlic, chopped
1 24 oz jar of strained tomatoes
1 tsp dried oregano
Salt and Pepper to taste
4 crusty rolls, split and toasted
8 oz mozzarella cheese, shredded
Instructions
In a large bowl, combine meat, egg, bread crumbs and seasonings. Shape into 1 1/2″ meatballs.
In a large skillet, brown meatballs on all sides. Remove meatballs and drain all but 2 tbsp of oil.
With the pan over a low heat, add chopped garlic and cook for until golden about 2 minutes.
Add jar of tomatoes and oregano and stir. Add salt and pepper to taste. Cover and simmer for 30 minutes. Preheat oven to 350.
Fill toasted rolls with sliced meatballs. Top with cheese and bake for 5 minutes or until cheese melted at 350°.
