Banana Colada

I agree with Ellen, only this time I’m balancing my colada with a banana.  It is, in fact, a perfect pairing.

I saw those bananas getting darker and darker every day.  Each day I thought I’m going to have to do something with those bananas!  So of course the first thing I thought of was probably the first thing you thought of ~ banana bread.  Now don’t get me wrong, I love a good slice of banana bread, but I just wasn’t in a banana bread kind of mood.  There was always my favorite lunch which is chocolate peanut butter and banana on toast, a little improvement on the Elvis’ favorite, but there would still be some bananas going bad.  Then, I remembered an old recipe I’d printed out years earlier that I’d never made ~ Banana Coladas!!!  Now that was the mood I was in.  After all, summer was vanishing before my eyes but there was still time to take this frozen wonder out to the backyard swing and enjoy.

This recipe was just a pleasure.  It gets its sweetness from the fruit and the cream of coconut.  I may or may not have added an extra jigger or two of rum, but I’m not saying.  So if you have ripening bananas, let me encourage you to let the banana bread wait for fall and enjoy a banana colada while you still can.

Ingredients (Serves 4)

  • 3 ripe bananas
  • Juice of one lime
  • 1 cup pineapple juice
  • 1 cup cream of coconut
  • 2 oz dark rum
  • 2 oz coconut rum
  • 4 cups of Ice

Instructions

  • Add bananas and juice of the lime in the blender and puree until smooth.
  • Add the rums and cream of coconut and blend until smooth.
  • Add ice and blend well.

Leave the banana bread until the Fall. Use your overripe bananas to make Banana Coladas!
