1 1/2lbsboneless chicken breast cut into 1" cubesor protein of your choice
2tspgarlic minced
2tsponion powder
2tspchili powderI use New Mexican chili powder
1tspcumin
1tspblack pepper
1 1/2tspsalt
1lemon
10strips of bacon cut into 1/2" lardons
1red bell pepper cut into 1" cubes
1green bell pepper cut into 1" cubes
1small onion cut into 1" cubes
1bunch cilantro chopped
10ozOaxaca cheese, mozzarella is a fine substitute

Instructions
Place cut chicken breast into a bowl. Add garlic, onion powder, chili powder, cumin, black pepper, salt and the juice of lemon. Mix and let marinate while preparing other ingredients.
Cook the lardons of bacon over medium heat until crispy and remove to a plate.
In the same pot, cook marinated chicken in the bacon fat until golden and cooked through, about 8 minutes. Remove to a plate.
