Meatball Sandwiches
Hearty and beefy meatballs smothered with a garlicky tomato sauce, smothered in mozzarella all in a crusty roll.

- 1 lb lean ground beef
- 1 egg lightly beaten
- 1/2 cup bread crumbs plain or Italian
- 2 tbsp fresh parsley chopped
- 1/8 tsp black pepper
- 2 tbsp vegetable oil
- 2 cloves garlic chopped
- 1 24 oz jar of strained tomatoes
- 1 tsp dried oregano
- Salt and Pepper to taste
- 4 crusty rolls split and toasted
- 8 oz mozzarella cheese shredded
In a large bowl, combine meat, egg, bread crumbs and seasonings. Shape into 1 1/2" meatballs.
In a large skillet, brown meatballs on all sides. Remove meatballs and drain all but 2 tbsp of oil.
With the pan over a low heat, add chopped garlic and cook for until golden about 2 minutes.
Add jar of tomatoes and oregano and stir. Add salt and pepper to taste. Cover and simmer for 30 minutes. Preheat oven to 350°.
Fill toasted rolls with sliced meatballs. Top with cheese and bake for 5 minutes or until cheese melted at 350°.
