Beignets

A powdered-sugar laden bite of warm sweet fried dough. If that doesn't make you smile, nothing will.

Ingredients

  • Oil for frying
  • 1 cup of milk
  • 1 large egg
  • 1/4 cup melted butter
  • 2 cups all purpose flour
  • 1 1 2 tbsp baking powder
  • 1 tsp salt
  • 2 tbsp granulated sugar
  • 1/2 cup powdered sugar

Instructions

  • Beat the egg in a bowl, then add milk and melted butter and mix together.
  • In a separate bowl mix the flour, baking powder, salt and granulated sugar.
  • Add the milk mixture and stir until a smooth dough forms.
  • Heat at least 2" of oil in a deep pot to 350ºF. (Should be big enough to fry 4 beignets at a time)
  • When oil is hot, drop dough by rounded tablespoons into hot oil. I used a small ice cream scoop which worked well and help to make beignets consistent in size and shape.
  • Fry until beignets are dark golden brown. This should take about 2 minutes to insure that the dough is cooked through. Check one out of the first batch to make sure your oil is at the correct temperature.
  • When they are all done, roll in a generous amount of powder sugar.
  • These are best warm, but can be eaten at room temperature until later in the day.
