Ingredients
2cupschickpeas that have been simmered in water until very softreserve cooking liquid.
1/2cuptahini
1/4cupextra virgin olive oilplus more for garnish
2clovesgarlicpeeled
Juice of 1 lemon
Salt and pepper
1tbspground cumin or paprikaor half tbsp of each
Instructions
Put the chickpeas, tahini, oil, garlic, and lemon juice in a food processor or blender, sprinkle with salt and pepper, process until smooth Add chickpea-cooking water to reach desired consistency. Taste and adjust seasonings.
