Ingredients
  • FOR THE BEANS:
  • 1 pound Dried Small Red Beans, Picked Over, Rinsed, And Soaked
  • 8 cups Water
  • 1 Smoked Turkey Leg, Or 2 Ham Hocks
  • 1 Large Onion, Chopped
  • 2 Large Celery Stalks, Chopped
  • 1 Large Bell Pepper, Chopped
  • 2 cloves Garlic, Chopped
  • 2 Bay Leaves
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Pepper
  • ½ teaspoons Ground Red Pepper
  • Salt To Taste
  • FOR RICE:
  • 2 cups Long Grain White Rice
  • 4 cups Water
  • 1 teaspoon Salt
Instructions
  1. For the beans, combine all ingredients in a large pot except salt and bring to a boil.
  2. Reduce heat and let simmer, covered, and stirring occasionally, for about 1 ½ hours.
  3. Remove turkey leg and shred off the meat from the bone.
  4. Season the beans with salt.
  5. Add the meat back to the pot.
  6. Meanwhile, during the last half hour of cooking, make the rice according to package instructions. Serve the beans over rice.
