Slow roasted pork in citrus, olive oil and garlic.

  • 8.5 lbs Pork Shoulder, bone in
  • ¼ cup olive oil
  • ¼ cup lemon juice or vinegar
  • 5 or 6 cloves garlic, chopped
  • Salt
  1. Preheat oven to 325°.
  2. Cut deep slits into the pork in a diamond pattern and place in a roasting pan.
  3. Sprinkle generously with salt. (I use sal gorda)
  4. Drizzle with olive oil and lemon juice or vinegar.
  5. Add chopped garlic.
  6. Rub ingredients into meat
  7. Roast for 3 hours or until bone pulls easily away from the meat.
