Meatball Sandwiches

Hearty and beefy meatballs smothered with a garlicky tomato sauce, smothered in mozzarella all in a crusty roll.

  • 1 lb lean ground beef
  • 1 egg, lightly beaten
  • ½ cup bread crumbs, plain or Italian
  • 2 tbsp fresh parsley, chopped
  • ⅛ tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic, chopped
  • 1 24 oz jar of strained tomatoes
  • 1 tsp dried oregano
  • Salt and Pepper to taste
  • 4 crusty rolls, split and toasted
  • 8 oz mozzarella cheese, shredded
  1. In a large bowl, combine meat, egg, bread crumbs and seasonings. Shape into 1½" meatballs.
  2. In a large skillet, brown meatballs on all sides. Remove meatballs and drain all but 2 tbsp of oil.
  3. With the pan over a low heat, add chopped garlic and cook for until golden about 2 minutes.
  4. Add jar of tomatoes and oregano and stir. Add salt and pepper to taste. Cover and simmer for 30 minutes. Preheat oven to 350°.
  5. Fill toasted rolls with sliced meatballs. Top with cheese and bake for 5 minutes or until cheese melted at 350°.
