A powdered-sugar laden bite of warm sweet fried dough. If that doesn't make you smile, nothing will.

  • Oil for frying
  • 1 cup of milk
  • 1 large egg
  • ¼ cup melted butter
  • 2 cups all purpose flour
  • 1 1\2 tbsp baking powder
  • 1 tsp salt
  • 2 tbsp granulated sugar
  • ½ cup powdered sugar
  1. Beat the egg in a bowl, then add milk and melted butter and mix together.
  2. In a separate bowl mix the flour, baking powder, salt and granulated sugar.
  3. Add the milk mixture and stir until a smooth dough forms.
  4. Heat at least 2" of oil in a deep pot to 350ºF. (Should be big enough to fry 4 beignets at a time)
  5. When oil is hot, drop dough by rounded tablespoons into hot oil. I used a small ice cream scoop which worked well and help to make beignets consistent in size and shape.
  6. Fry until beignets are dark golden brown. This should take about 2 minutes to insure that the dough is cooked through. Check one out of the first batch to make sure your oil is at the correct temperature.
  7. When they are all done, roll in a generous amount of powder sugar.
  8. These are best warm, but can be eaten at room temperature until later in the day.
